Moist Carrot Cake Recipe

Last Saturday, I've made Moist Carrot Cake for my little nephew birthday party guests.

P/S:  something going wrong with the image.. will fix it later.. LOL!!!! 

Here is the recipe:-

Ingredients (A):
2 cups all purpose flour
2 tsp baking soda
2 tsp baking powder
1/2 tsp salt
3 tsp ground cinnamon powder
1/2 tsp nutmeg

Ingredients (B):
4 eggs
1 1/4 cups oil
1 cup granulated white sugar (gula pasir can do)
1 cup packed brown sugar
1 tsp vanilla essence

Ingredients (Others):
3 cups grated carrots
1 cup nuts (pecans @ walnuts) - optional
1 cup raisins - optional

Cream Cheese Frosting (A):
250g cream cheese (any brand), softened
1/4 - 1/2 cup of dutch lady sweetened condensed milk

or

Cream Cheese Frosting (B):
8 ounces cream cheese, softened
1/2 cup butter, softened
2 cups confectioners' sugar
1 tsp vanilla extract

Instruction:-
1.  Preheat oven to 325F.  Prepare 2 of 9' pans or one 12' cake pan or one 9' x 13 sheet pan.
2.  Mix together all ingredients (A) in a bowl.
3.  In a bigger bowl, whisk together eggs and all ingredients (B) about a minute or so.
4.  Add the dry ingredients to the wet mixtures and mix about 2 mins or more.
5.  Add the grated carrots. The more carrots, the more moist is the cake.  Then add nuts or raisins as per your preferences.
6.  Pour batter in prepared cake pans and bake for approximate 45 to 50 mins or till it cook (depend on your oven size and type).  Test for doneness by inserting a skewer, it should be dry when taken out.  Cool then fill and frost with the cream cheese (you can choose any of the recipe either A or B) frosting.  Can garnish with more nuts or grated cheddar (your preference).
7.  To make the Cream Cheese Frosting:-
     7.a  Mix together the ingredients till it blend.
or
     7.b A bowl beat together cream cheese and butter until creamy.  Add in icing sugar and beat for a minute.  Add vanilla.  Scape down the sides o the bowl and beat for another minute.

Jong Crocodile Farm

Yesterday, we made a family outing to Jong Crocodile Farm (Siburan Sarawak ~ please google the place to know more ya.. lol!!! or you can visit to their page here )...

Entrance Fee for local Sarawakian (inclusive of GST):
Adult ~ RM12
Children (aged 3-12yrs old) ~ RM6


Coincidence we met our neighbour yesterday who went to the same place too.. A good catch up as we seldom see each other because they're overnite in other place when they run their food business.

We purposely went there at the time almost the feeding hour:
Opening Hour:  9am - 5pm (Daily  Monday to Sunday)
Feeding Demonstration: 11am and 3pm daily

Conclusion: Kids enjoy and we had fun!

The Best Butter Cake Recipe

The Best Butter Cake Recipe

Bahan bahan:
250 gram pure butter jenama Anchor
250 gram tepung naik sendiri
180 gram gula kaster
4 biji telur
1/2 cawan susu segar

Cara cara:
1. Panaskan oven dalam 20 atau 30 minit.
2. Pukul butter dan gula hingga kembang, gebu dan bertukar warna menjadi putih (low speed kemudian sederhana kemudian high speed).
3. Masukkan telur sebiji demi sebiji di selang seli dengan  tepung. Masukkan susu segar dan pukul lagi sampai sebati.
4.Masukkan dalam loyang saiz 8-9" yang telah dilapik baking paper atau dispray terlebih dahulu.
5.Bakar dalam oven yang telah dipanaskan dengan suhu 180C selama 40 minit atau sehingga masak. Angkat dan sejukkan atas redai.

Nota:
Jika guna tepung gandum, boleh masukkan 1 sudu kecil baking powder.

Resepi Roti Sosej Pintal

Bahan-bahan A
1 paket yis mauripan 11g
4 sudu gula
2 sudu susu pekat
1 cawan air suam
(Satukan semua bahan-bahan di atas. Selepas 10 mins,anda akan dapati buih yis semakin banyak)
1 telur ayam (letak selepas 10mins kemudian).

Bahan-bahan B
3 1/2 cawan tepung gandum
2 sudu besar butter

Bahan tambahan
Sosej (rebus terlebih dahulu)

Cara-cara
1. Pukul bahan B.
2. Masukkan Bahan A sedikit demi sedikit ke bahan B atau sampai doh tidak melekit di tangan.
3. Biarkan doh agar ia kembang 2 kali ganda saiznya selama sejam.
4. Kemudian tumbuk2 kan doh tadi.
5. Boleh pintalkan sosej (ni terpaksa tanya encik google yer cara nak pintal), atau boleh dbuat bun kosong biasa... untuk roti sosej pintal, anda blh hiaskan sedikit sos tomato atas topping,mayonese dan cheese atasnya..kalau malas boleh sapu jer dengan kuning telur atau mentega cair ke atas roti tadi. Biarkan doh rehat seketika..
6. Bakar selama 20-30mins @150C bgantung dengan jenis oven anda.
7. Boleh sapu semula dengan mentega cair tadi supaya roti lembut.
