No Bake Chocolate Cheesecake
This recipe is dedicated to my dear friend Rebecca... My kid love dis cake which he describe this as ice-cream cake.. i do admit too, it does taste like ice cream n so yummy.. :)
Here is the recipe...
Ingredients:-
150g - digestive biscuits
45g - butter
110g - Caster sugar divided
120ml - Whipping Cream
150g - dark chocolate, melted & cooled
2tbsp - cocoa powder, mixed with a little hot water
200g tube cream cheese (but i use 250g..)
Method:-
1. Crushed & mix with the melted butter &1 tbsp of the Caster sugar. Press onto 18cm cake tin & refrigerated.
2. Whip cream until soft peak stage. Add cooled melted choc then the cocoa powder mix. Blend well & set aside. Beat the cream cheese & remaining sugar together. Fold in cream / choc mixture & mix thoroughly..
3. Spread into tin on top of crushed biscuits. Freeze for one hour. Refrigerated about 30mins then serve...

Plain cupcakes with Cheese Topping
I've tried this recipe and i love it.. actually, the cupcake is lemon flavor but i modified it by ignore the lemon... reason??? cos i dun have any lemon in da hse at dat time.. lol!!

250g - butter
240g - Caster Sugar
1tbsp - Vanilla essence
3 - large eggs
250g - Self raising flour.. sifted
200ml - Marigold Evaporated Full Cream Milk
Cream cheese topping...
250g - Cream Cheese, room temperature
100g - Icing sugar, sifted....
3 tbsp - Marigold Evaporated Full Cream Milk
1tsp - Vanilla essence
Method:
1. Preheat oven to 180C. Cream butter and caster sugar til light and fluffy. Beat in eggs one at a time.
2. Fold in sifted flour with Marigold evaporated full cream milk. Add in vanilla essence and rind.
3. Spoon mixture onto paper casing til half full.
4. Bake for 20mins. Leave cake to cool.
5. Beat cream cheese with icing sugar, Marigold evaporated full cream milk, and vanilla essence for 2mins.
6. Spoon 1tbsp cream cheese icing over top of cupcake.
Decorate to your liking...
